The Garden 80 features a cooking chamber separated from the combustion chamber. Having this design avoids food contact with smoke and makes it easier to regulate the quantity of wood necessary to obtain the right temperature. The combustion intensity can be adjusted using the smoke valve by which it may be modified the draft, or by varying the opening of the vents opening of the combustion chamber door. The humidity in the cooking chamber can also be adjusted, with the steam valve, while ventilation further improves the internal heat distribution for cooking. The oven can reach the right temperature in only 30/40 minutes, with just 6 to 8 lbs of wood, keeping this temperature stable for over 2 hours after the fire is out.
